Our Story
Back in the 60’s Rancher Mark Johnson moved his family hundreds of miles from Montana to Wyoming among the western slopes of the Big Horn Mountains. In reality, he had a dream of establishing a family ranch near the community of Ten Sleep. The land was rich and had access to many mountain springs. With this in mind, this rich land provided a place to establish a home for this young family with 11 children.
Son, Richard had learned a thing about working hard and taking care of things as independently as possible. As times changed Richard was able to carry the ranch and his family into the future. He found the power of regenerative solutions in order to produce Nutrient-Dense Beef. How did the Buffalo handle this land? By studying the past the Future became more hopeful. Because of this, the meat from the Carter Family ranch is steeped in family, food, and heritage. They are an advocate for a more honest relationship between land, ranch, and table.

Big Horn Boxes are a delectable collection of the best of the best. This is a true example of the best beef that is possible with limited cold storage. Big Horn boxes of 6, 10, or 20 lbs of double-aged, nutrient-dense beef can be delivered directly to your doorstep. Furthermore, this is beef straight from the producers and delivered straight to your door. Extra boxes of ground Beef are also available for purchase with the Boxes or as Stand-alone purchases.
Tips for the Best Steak Dinner
A good piece of well-marbled beef, a hot grill, and a really good Red wine like the Nile Eddy that had also been delivered to your door is the beginning of this meal.
Take your meat from the refrigerator and let it sit out while you get your grill or cast iron skillet hot.
At this point my son wants me to saute in a generous amount of butter, 1 chopped onion, and an 8 oz. package of sliced mushrooms. You want enough butter left that is seasoned by the mushrooms and onions to use on a potato or the steak.
Ready to Cook
Now ready to cook. Place the meat on the hot grilling surface and let it char before you try to move it again. After 2-4 minutes turn and let it char on the other side. a meat thermometer is helpful to help you keep from overcooking. about 5 degrees before it reaches your ideal temperature take it off the fire and let it rest. It will continue to cook at this time and you don’t want it to overcook. If you do not you will lose all the juices also do not cut it straight from the heat, it will lose all of its moisture. After resting you may cut across the grain. If you wish cut it but not all the way through, pour some of our delicious onion, and mushroom butter on the steak, and return it to the fire for a few minutes until heated through.
A grill-cooked potato, fresh green salad, Sourdough Rolls and a glass of Fine Red Wine will finish your dinning experience. If you have it on the Grill call and I will try to make it!
